ARE SAVVY CONSUMERS FORCING FOOD COMPANIES TO CHANGE?

Controversial Ingredient To Be Removed From Silk Beverages

In today's episode, our co-hosts Jimmy Moore and Dietitian Cassie welcome two extraordinary guest friends to help them opine on the health headlines today, including a Type 1 diabetics who uses a real foods-based ketogenic Paleo nutritional approach to control her disease named Katie Coleman from the "Keep It Real Food Co." and Dr. Jim Small from "The PaleoPathologist" who is a medical pathologist and a former professor who discovered the personal health benefits that come from of a low-carb Paleo lifestyle change. At the beginning of today's episode, Jimmy asked Cassie to explain what she means by her "PFC Balanced" philosophy in response to quite a few concerned e-mails he has received from listeners who were confused about how that fits within a low-carb or Paleo diet. During today's episode, we also shared about Cassie's new video series which you can see a sample of below:

CASSIE'S FABULOUS NEW PFC CLUB EDUCATIONAL VIDEOS:

Update on the PFC Club!

Listen in to hear Jimmy, Cassie, Katie and Dr. Jim talk about the Silk Beverage company making the decision to remove the carrageenan from their products after consumers demanded it, the implications of that 15-ton "fatberg" that was removed from the London sewer recently, the wisdom of the marketing strategy being used by Olive Garden promoting 7 weeks of unlimited pasta for $100, the impact of consuming Ramen noodles on heart disease, diabetes, and stroke risk, the foolish decision by Eggland's Best to lower the fat and calories in their eggs by feeding the chickens a vegetarian diet, why school lunches in France are far superior to the ones provided to American kids, and an innovative new treatment modality one hospital is using feeding their patients real food grown from a garden on the hospital property. And don't miss Katie's Cauliflower Mac & Cheese as well as Dr. Jim's Breakfast Frittata and cast iron skillet cleaning tip at the end of the show. When Dietitian Cassie first joined this podcast as a guest friend way back in Episode 50, who knew that someday she would not only be a part of the history of "Low-Carb Conversations," but would play such an integral role in its growth and success? It's been almost exactly two years since she took over as co-host from Mindy Noxon Iannotti to join Jimmy Moore each week looking at the health headlines and she has done such an amazing job in her role that she warrants being a part of the name of the show, too. This is the big announcement we said we were going to make today and here it is: the name of this podcast is changing to "Low-Carb Conversations with Jimmy Moore, Dietitian Cassie & Friends!"

Cassie so deserves that equal billing with Jimmy for developing into one of the most knowledgeable, skilled health podcasters online today. We are all so proud of what she brings to this podcast through the education she has had in nutrition and the experience of working with thousands of clients to make them healthier than they could have ever imagined through her PFC balanced approach to diet. Listen in to hear Jimmy, Cassie, Kelsey and Bob have a fun-filled time sharing their thoughts about the secret ingredients found in the popular Pumpkin Spice Latte from Starbucks (and none of them are pumpkin!), yet another new cholesterol-lowering pill promoted as healthy and heart attack-preventing, how weight loss transformation pictures can be manipulated very easily, the reaction from the vegan community to all the positive stories about saturated fat that have been happening in 2014 (you gotta love it!), how Lebron James' success eating a low-carb diet has brought out the defenders of carbohydrate-based foods in force, whether Dr. Atkins is finally getting his vindication in light of all the positive coverage of low-carb, high-fat diets, and the role of dietary fat in maintaining a healthy weight. These are exciting times for those of us who believe in the healthy low-carb lifestyle. Coke Confronts Its Big Fat Problem

In today's episode, our co-hosts Jimmy Moore and Dietitian Cassie are joined by two truly amazing guest friends who actually both found Paleo through the Whole30 in a San Francisco Bay Area Certified Nutrition Consultant with a fascinating story of overcoming alcohol and smoking addiction named Susan McCauley at "Evolve Nutrition" and an amateur triathlete who was diagnosed with a debilitating condition called "Glycogen Storage Disease Type V" (also known as McArdle's Disease) and discovered the amazing health benefits that come from eating a ketogenic Paleo diet named Dane DeValcourt (Dane's story is featured in Jimmy's new book Keto Clarity). Listen in to hear Jimmy, Cassie, Susan, and Dane give their thoughts about that new low-carb vs. low-fat diet study funded by the National Institutes of Health that published this week, why there is danger to your health when you don't consume ENOUGH salt in your diet, the desperation by companies like Coca-Cola to revive their brand that has been built on sugary sodas, another vascular surgeon coming out in opposition to statin medications, an op-ed from a frustrated chef who doesn't think customers should be making so many menu substitutions without a disease requiring it, a registered dietitian (and it's not Cassie!) sharing why saturated fats and cholesterol are not harmful to consume, and why school districts are making the decision to drop the new federal "healthy" school lunch guidelines because they're just not working. Courtney's Snackmonster (Grain-Free) Granola

Dry ingredients:
1c almond meal (coarse ground such as from Trader Joes)
½ c flaxseed meal
1 Tbsp cinnamon
2 tsp sea salt- more to taste
1 c shredded unsweetened coconut
¼ c sunflower seeds (or any other seeds/nut of a similar size such as pumpkin seeds, cashew pieces, slivered almonds)
~2 c mix unroasted, unsalted nuts (combo of almonds, pecans, walnuts is my favorite)
1 big handful of dried wild blueberries (or other dried fruit diced up)

Wet ingredients:
1 Tbsp vanilla
½ c coconut oil in solid form
¼ c + 1 Tbsp honey

1. Preheat oven to 300 degrees and line a large baking sheet with foil (this makes for easier clean up).

2. Mix all dry ingredients (EXCEPT dried fruit) in a large bowl.

3. Melt coconut oil in microwave. Mix in the honey and vanilla and then stir into the dry until everything is moistened.

4. Use a spatula to spread granola evenly on the baking sheet.

5. Bake for 15 minutes. Remove from oven. Gently stir and flip in sections.

6. Increase temperature to 325 degrees.

7. While oven temp increases sprinkle your dried fruit over the just flipped granola and press down into the granola with a spatula.

8. Return to the oven for about 10 minutes. Keep an eye on it, you don’t want it to darken too much and taste burnt.

9. Once removed from the oven let it cool, this is what will let it get crunchy.

10. Enjoy over full-fat yogurt, cottage cheese, with almond milk, or just by itself!

Paleo food truck owner Shelby Malaterre and registered dietitian Lindsey Jay join our hosts Jimmy Moore and Dietitian Cassie today in Episode 120 of "Low-Carb Conversations With Jimmy Moore & Friends!"

AUDIO

A shift in thinking is happening right before our very eyes when it comes to what we think about nutrition and health. We hope in some small way that is happening because of the work we do here on this podcast and in the low-carb, Paleo, real food health community. We still have a long way to go which is why we are committed to being here for you on Friday's discussing the health news that people are talking about. If you're a regular listener, then you know there's usually more to the story than what is being shared in the mainstream media. We offer up an alternative take to help you stay focused and encouraged. CLICK HERE to donate your gift of any amount to help us provide new episodes for months and years to come. WHY WON'T THIS WALMART ICE CREAM SANDWICH MELT IN THE SUN?

http://youtu.be/SozZHZAWS64

In today's episode, our co-hosts Jimmy Moore and Dietitian Cassie welcome in a pair of awesome guest friends in an Indianapolis, Indiana-based Paleo food truck owner and operator named Shelby Malaterre from "Caveman Truck" (who submitted a recipe used in Jimmy's new book Keto Clarity) and a Missouri-based registered dietitian in Lindsey Jay. Listen in to hear Jimmy, Cassie, Shelby, and Lindsey give us their thoughts and opinions about some recent health headlines, including a disturbing look at why Walmart's ice cream sandwiches don't melt in the sun, how so many consumers are confusing the term "local" with "organic," how low-carb diets have supposedly gotten things all wrong, a bestselling diet book author does a 180-degree change of his position on consuming dietary fat, why people in Europe don't refrigerate their eggs and how American eggs would be illegal there, and new stem cell research the can "reverse" heart disease and the surprising diet of the man with atheroschlerosis in the story. Plus, we've got an awesome jicama taco recipe from Shelby and a cauliflower taco shell recipe from Lindsey at the end of the show. So pull up a chair, grab a cup of coffee and let's talk!

Lindsey's Cauliflower Taco Shells
3/4 head cauliflower
2 large eggs
1/4 cup chopped cilantro
1 juiced lime (I also zest the lime for more flavor)
Sea Salt (to taste)

1. Preheat over to 375 degrees
2. Cut cauliflower into small uniform pieces, and pulse in a food processor in batches until you get a good consistency. This should make about 2 cups.
3. Place cauliflower in a bowl and microwave for 2 minutes, then stir, and microwave again for another 2 minutes. Then place cauliflower on thin cloth to squeeze as much liquid out as possible.
4. In a different bowl whisk eggs and add incauliflower, cilantro, lime, and salt. Mix
5. Form mixture into tortillas
6. Bake for 10 minutes, flip tortillas, then bake again for another 5 minutes. Set on cooling rack.
7. Heat a skillet and place a baked tortilla in the pan and brown for 1-2 minutes, flip and repeat.
