CAMILLE'S BLAT OMELET WITH GARLIC AIOLI RECIPE

Serves 2

BLAT, if you’re not familiar, stands for BACON-LETTUCE-AVOCADO-TOMATO, and is typically an upgrade to the famous BLT sandwich. Here’s my take using eggs, glorious eggs! This is the best low-carb breakfast on the block.

6 eggs
1/4 cup chopped green onions
Butter, for cooking eggs
6 slices applewood smoked bacon, cooked crispy and crumbled
2 avocados, diced small
1/2 cup grape tomatoes, cut in half
1 teaspoon lemon juice
1/2 teaspoon Spike or other seasoned salt
1 cup arugula
2 tablespoons Balsamic Reduction (Trader Joe’s and some other markets carry a Balsamic Glaze if you want to skip this step)

Heat a 9-10 inch skillet on medium-high heat. Add about a teaspoon of butter. Whisk eggs in a medium bowl. Add half of the eggs to the hot pan and sprinkle with green onion, salt, and pepper. Turn to low and cover, allowing the steam to cook the top of the egg. You can get crazy and try to flip it, but you risk breaking it. Toss avocado, tomatoes, and arugula with lemon and seasoned salt. When top cooked, remove from pan and add bacon, and salad. Fold over, slice in half, drizzle with balsamic glaze and serve with a dollop of aioli.

Laura's Sauced Pork Chops
Over medium-high heat, place pork chops seasoned with salt and pepper in skillet and cook about 4 minutes each side depending on thickness. Make sure skillet is hot so you can get a good sear. When they're mostly done, remove and cover or put in warm oven.

De-glaze the pan with chicken stock, bone broth, or white wine and scrape up all the bits at the bottom of the pan. Reduce to a simmer and whisk about 1 1/2-2 Tbs of Dijon mustard into about 1/3 cup of heavy cream and then dump that into the pan. The sauce will thicken up in a minute or two and just pour it on top of the meat and steamed veggies.

Recipe:

Rachel Flowers Yellow Squash Casserole

Makes 10 servings

5 lbs yellow squash
2 eggs
almond meal (optional and totally not needed, I grind my own, though, too)
4 ounces butter
1/4 cup maple syrup2 teaspoons salt (I use celtic sea salt)
2 tablespoons finely chopped onions
1 dash pepper

Directions:

1. Cut the tops off the squash.
2. Cut in 3- 4 pieces.
3. Boil in water til tender (just a few minutes).
4. Drain and mash.
5. Add remaining ingredients.
6. Place in casserole dish.
7. Cover with the light layer of almond meal.
8. Bake at 350 til lightly browned (about 10- 15 minutes).

* I boiled, drained, Mashed, Drained then baked 30 mins 350F

Recipie:

Gina Reig's Creative Curry Clafouti

(As we discussed during the show, it is pronounced "cla-FOO-tie," and it's kind of like a quiche. It keeps well and is super yummy!)

Ingredients:

• 6 eggs
• 6 tablespoons melted grass-fed butter/ghee/coconut oil cooled to room temp. + 1 pat for greasing pan
• 3/4 cup coconut milk
• 4 cups cooked, chopped chicken (optional) You can sub any cooked meat and/or greens, onions, etc.
• 2 tablespoons curry spice, or to taste
• Sea Salt & Pepper to taste

Directions:

• Preheat oven to 400° F.
• Butter a 10” round or 13×9” baking dish
• Whisk together eggs, fat & coconut milk until frothy.
• Mix in chicken or other meats/veggies and spices and pour into baking dish.
• Bake about 45 minutes or until top is golden brown and puffy.

Today's recipe is Adam's dad's pot roast from their book, The 12 Essential Low Carb Cooking Skills: Plus, 49 Simple, Scrumptious Low Carb Diet Recipes.

Pot Roast (Serves 4 to 6)

Pot roast is a good simple one-pot meal that requires a minimum of fussing. Like any braise, it takes some time to prepare. It is easily prepared in a slow cooker. (Follow manufacturer's directions for cooking time and temperature.) This recipe is very basic, but fail-safe.

Ingredients:
1 (3 to 4 lb.) pot roast (chuck, top or bottom round)
2 tablespoons extra virgin olive oil
1 (14 1/2 ounce) can chopped tomatoes
2 cups beef stock
2 onions, coarsely chopped
2 garlic cloves, chopped
3 large carrots, peeled and cut on the bias into 1" pieces
2 celery stalks, chopped
4 ounce cremini mushrooms, quartered
1 tablespoon herbs de province
2 bay leaves
Kosher salt and pepper
Chopped flat-leaf parsley, for garnish

Preheat the oven to 375 degrees. Season the meat on all sides with salt and pepper. In a Dutch oven, brown the meat on all sides in the extra virgin olive oil. Add the tomatoes, the onions, the herbs de province, the bay leaves and the rest of the veggies. Make sure all the herbs and veggies are immersed in the liquid. Bring back to a boil. Tightly cover the pot and place it in the oven. Roast for about 3 hours, or until the meat is tender. When done, remove the pot from the oven. Remove the meat and allow it to rest on a cutting board. If the jus is too thin, return the pot to the stove top and boil to reduce it. The jus should be thin but well-flavored. Correct the seasoning. Slice the meat and serve accompanied by the veggies and jus, garnished with parsley, or, you can serve a few chunks of the beef atop some pureed veggies with a bit of the jus over top and garnished with the parsley (yum!).

Recipe:

LOW CARB CHICKEN FAJITAS
INGREDIENTS
â–ª 1 medium chicken breast
â–ª 1 lettuce
â–ª 2 tomatoes
â–ª 1 red pepper
â–ª 1 birdseye chilli
â–ª 1 small red onion
â–ª ½ avocado1 lime
â–ª 1 tablespoon of olive oil
DIRECTIONS
Cut 1 tomato, ½ red pepper, birdseye chilli and red onion to make a salsa. Spoon out the avocado and chop up the other tomato, mix those together, squeeze the lime in and mash it up to make a guacamole.
Slice the other ½ of the red pepper and chicken into strips. Fry them in the olive oil. Once cooked put on a separate plate. Now comes the low carb bit. You'll be using the lettuce leaves as tortillas to make the fajitas. With a leaf in hand spread on some salsa, guacamole and place some fried chicken peppers on top. Roll it up and eat it up, but be careful  as I have had salsa juice run down my top on a couple of occasions!

Recipe From Keri Rogers:

 

 

Ingredients:

 

1 lb. grass-fed beef skirt steak

 

Marinade:

 

Fresh Ginger, grated

 

Braggs Liquid Aminos or Coconut Aminos*

 

Pepper

 

Sea Salt

 

Directions:

 

1. Sprinkle salt and pepper over the skirt steak. Rub fresh ginger and aminos over both sides of the steak.

 

2. Place covered in the refrigerator to marinate over night.

 

3. Preheat oven to 250 degrees Fahrenheit. Heat a medium sized skillet over medium heat. Once pan is hot, sear the meat for 1-2 minutes per side. Place in a baking dish.

 

4. Bake for 3 hours. Cool in the refrigerator.

RECIPES
From Dr. John Mitchell:
Protein Bar
1 cup macadamia nuts
1 cup almonds
1 cup chopped dates
4 Table spoons coconut butter
3 Tablespoon coconut oil
2 eggs
2 scoops protein powder
1 tablespoon butter
1/4 teaspoon cinnamon
1 teaspoon vanilla
1/4 cup shredded coconut
10 drops Stevia
In a food processor, put both nuts and chop into small pieces
In a large bowl, put nuts, dates, protein powder....mix throughly
In a small sauce pan, melt the butter, coconut butter, and coconut oil together using low heat.
When dissolved, add vanilla, Stevia, and cinnamon.
Pour into nut/date/protein powder...mix throughly.
Put eggs into mix, and stir throughly.
In 8x8 pan, coat bottom and sides with butter.
Put mixture into pan, press firmly into pan, sprinkle shredded coconut on top, and press/work that into the mixture.
Bake at 300 degrees, covered with foil, for 25 minutes
Then remove foil, and bake for 5-7 minutes until lightly toasted on top.
Veggie Dip
1 pint of sour cream
1 heaping tablespoon Better Than Bouillon (chicken flavor is best)
1/3 squeezed lemon
1 T dill powder
1 T onion powder
1/4 c feta cheese
pepper for taste
Mix all together. Use as veggie dip, sauce for any meats, just about anything! This one I use for dipping into with veggies:(not really "paleo", but it is all dairy fat, so no issues with milk lactose, milk proteins, etc.
Another recipe (one of my "favorites"...lol):
-Large skillet
-6 slices of bacon
-Cook, eat, and enjoy!!!

GEORGE STELLA'S EASY CHEESY CHILI CHICKEN 
2 tablespoons olive oil 
2 tablespoons cilantro 
1 tablespoon chili powder 
1 tablespoon cumin 
2 teaspoons salt 
1 clove garlic, chopped 
1/2 teaspoon pepper 
1/8 teaspoon cayenne 
4-5 boneless chicken breasts 
1/4 cup green pepper, julienned 
2 tablespoons red onion, diced 
1/4 cup Roma tomato, diced (about 1/2 small) 
4 ounces colby-jack cheese, shredded

Liver Salad Shake by Ray Dorman

2 oz. frozen, raw, pasture-raised beef liver
3 hand-fulls of salad mix

3 T. Coconut Oil
1 whole lime
1/2 cup frozen blueberries
4 oz. Real 100% cranberry juice
1 scoop red berry powder (I use Trader Joe's Super Red Drink Powder)
1 scoop green juice power (I use Trader Joe's Super Green Drink Powder)If you want to reduce carbs, skip the powders, juice, and berries. Add
an extra lime and some ice.

Add all ingredients to a powerful blender and mix until smooth. Tastes
best when very cold.

Asian Infused Lettuce Wraps by Lydia Shatney

1 pound grass fed ground beef

1/4 pound of grass fed liver, pureed (optional)

1 head of leaf lettuce, bibb or butter lettuce

3 cloves garlic minced

1 tablespoon grated ginger

1 lime, juiced and zested

1 teaspoon red chili paste, or more to taste

2-3 scallions, minced

1/4 cup minced cilantro

splash of rice wine vinegar

splash of naturally fermented gluten free tamari or shoyu (soy sauce)

salt to taste

Heat a skillet with a bit of bacon grease or lard. Add the ground beef and cook on medium. Add the garlic, ginger, zest and lime juice, scallion, cilantro, chili paste, rice wine vinegar and soy sauce. Stir well until the meat is cooked through.

Remove from heat and place in a serving bowl. Rinse the head of lettuce and dry well. Place the clean leaves individually on a plate. Serve alongside the meat – scoop meat onto lettuce and wrap, roll or fold and enjoy!! These were such a success with my kids that I think these will have to stand in once in awhile instead of regular tacos on taco night!!

Recipes:

Paleo Chewy Granola Bars by Sarah Ballantyne (aka The Paleo Mom)

Ingredients:
1 ½ cups slivered almonds
2 cups finely shredded unsweetened coconut
1/3 cup raw sunflower seeds
1/3 cup raw pepitas (hulled pumpkin seeds)
1 Tbsp sesame seeds
½ cup blanched almond flour
1/3 cup extra virgin coconut oil, melted
¼ cup unsweetened, natural almond butter (or Peanut)
¼ cup honey
1 tsp vanilla
¾ tsp baking soda
1 Tbsp ground flax seed
1½ Tbsp water
¾ cup mini chocolate chips or your favorite chopped dried fruit (optional)

1. Preheat oven to 325F. Grease a 9”x13” baking pan with coconut oil.

2. Mix ground flax seed with water and let sit for 3-4 minutes.

3. Pulse pepitas in a food processor a couple of times to break up to the size of sunflower seeds.

4. Add coconut oil, almond butter, honey and vanilla to flax goop and mix well.

5. Add almond flour and baking soda and stir to combine.

6. Add slivered almonds, shredded coconut, pepitas, sunflower seeds, sesame seeds and chocolate chips or dried fruit. Stir to combine.

7. Spoon batter into prepared baking pan. Spread out and flatten well with your hand or the back of a spatula.

8. Bake for 22-23 minutes, until golden brown. They will puff up slightly while baking, so immediately after removing from the oven, flatten the bars with the back of a spatula (or something else heat resistant and flat).

9. Let cool completely in pan before cutting into bars (I actually like to refrigerate before cutting). Cut into bars (I usually get 18-20) and wrap individual bars in plastic wrap for easy travel (optional). I prefer to store these in the refrigerator.

Bomb Diggity Bison Chili by Joey Cardillo

o 1 TBS raw certified organic extra virgin coconut oil
o Around 2 lbs of ground bison (but you can use other meat if desired)
o 1 organic onion (chopped up). We like to use white onion.
o 2 cups organic celery (chopped up)
o 2-3 cloves of organic garlic

o 1 jar of salsa (about a 12 ounce jar will work) or simply make your own. We like
pretty hot stuff so we use the spicy ones! Mild is cool also: just do what you like
best.
o Diced organic tomatoes, canned are ok but fresh are obviously better.
o 2 ½ tsp organic cumin
o 2-3 tsp organic chili powder
o 1-2 tsp organic thyme leaves
o 2 tsp Himalayan sea salt
o 1/2 cups organic green chiles

Sauté the onions, celery and garlic on low-medium heat for about 5 min. After
these are done sautéing, add the meat, chili powder, thyme and cumin (stir it up
for about 5 minutes so it all mixes up). Next pour your salsa in, add the tomatoes
and salt. Next come the green chiles. Let all of this simmer for at least an hour.

Make sure all ingredients are certified organic and meat is pasture-raised, grassfed organic. This stuff is bomb!

Recipe:

Flaxseed Crackers from Tina Langston

A great high fiber, crunchy, nutritious, and tasty snack. Good with dips, spreads, or plain.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:
• 1 cup flax seed meal
• 1/3 cup Parmesan cheese, grated
• 1 and 1/2 teaspoon garlic powder
• 1/2 teaspoon salt
• 1/2 cup water
Preparation:
Heat oven to 400 F.

1) Mix all ingredients together.

2) Spoon onto sheet pan which is covered with a silicone mat or greased parchment paper.

3) Cover the mixture with a piece of parchment or waxed paper. Even out the mixture to about 1/8 inch. I find a straight edge, like a ruler, works well, though you can use a rolling pin or wine bottle too. The important thing is not to let it be too thin around the edges or that part will overcook before the center firms up. So after you spread it out, remove the paper and go around the edges with your finger and push the thin part inwards to even it up.

4) Bake until the center is no longer soft, about 15-18 minutes. If it starts to get more than a little brown around the edges, remove from oven. Let cool completely – it will continue to crisp up.

5) Break into pieces.

The whole recipe is 6 grams of effective carbohydrate plus 35 grams of fiber.

Flaxseed Muffins from Tina Langston

3 eggs
1/4 cup vanilla davinci’s
1/4 cup cooking oil plus 2 T.
2T. water
2T. Cinnamon (amount is correct)
1/2 tsp. baking soda
1/2 tsp. baking powder
1 cup golden flaxmeal

Beat eggs and other wet ingredients well. Add dry, mix to combine. Let the batter sit for about 5 mins. Spoon into 12 greased muffin tins, bake @ 350- for 12ish minutes… I overbake mine slightly… they are almost crunch when they first come out but then soften up a little bit – I eat these over a course of like 4-5 days so I dont like them to turn to total mush. I make these as mini muffins and freeze them as I would not want anyone eating the whole lot over a few days. Drink plenty of water when eating items made with flaxmeal.

"Easy Ways To Reduce The Amount Of Fat In Your Diet" from the UK's "Change4Life" campaign

Sugar-free, super simple, key lime mousse by Ash Sierra

1 small soft ripe avocado (about 9 Tablespoons)
1/2 juice of a lime (or -- if you can -- use a key lime)
3 tablespoons coconut milk from native forest (in can, they don't use BPA)
pinch of salt
1 dropper vanilla stevia extract (I use the Now brand glyercine based)
5 Tablespoons coconut oil

Toss everything except coconut oil in a blender (I use a magic bullet type thing for this) and blend!
Heat coconut oil to liquid, add, and blend!

Finito! Be careful, you may eat the whole thing! If you put it in the fridge it will get much more solid....
Be creative, add 2 tablespoons of cashew or mac nut butter for extra richness, make a creamcheese topping..
I love to add some ground flax (not presoaked to avoid toxins!) it gives the mouse a built in crust taste
enjoy!

Dutch oven fail safe beef roast recipe by Whitney Ross

Ingredients:

Beef roast

Broth (I use my home made beef broth, but I have used mushroom or vegetable)

2 Bay leaves

3 -5 cloves Garlic

1 Onion

Seasoning (I like Penzy's beef roast seasoning, 8th Wonder, Herbamare or just garlic powder, salt and pepper)

Rendered lard, coconut oil, avacado oil, bacon fat

Instructions

Pre heat oven to 350

Heat oil in the dutch oven on medium high. (I have this dutch oven Costco Dutch oven but I wish I had this one Dream one )I use about 1/3 to 1/4 inch of oil.

Season the beef which has been brought to room temperature by taking it out of the fridge for 15 minutes to an hour. (not totally important)

brown the meat 4 minutes per side

Turn the heat off, add the onion, bay leaves, garlic and broth. The broth should just cover the meat, there can be some meat sticking out of the top of the broth, but not a lot.

Cover the pot and put it in the oven for 3 hours.

Primal meatballs by Whitney Ross

Ingredients for 25-30 meatballs

3 lbs of grass fed ground beef
3 eggs (farm fresh egg yolks for AIP)
3 C pulverized, cooked cauliflower (7 minutes in the microwave to cook it, no water stir halfway through)
1/2C parsley
3-6 cloves garlic chopped or pressed
1TBS salt
pepper to taste
1C raisins (omit for strict AIP, include if you are eating some sugar or some fruit)
1C grated parmesan (omit for AIP or find grass-fed, top quality cheese)
1/2 inch of oil in the pan to fry, bacon fat or olive oil or coconut oil

Mix all the ingredients together except the oil and then make 1 meat ball and fry it in hot oil with the temperature on medium - medium low in the pan. Brown it on all sides, about 2 minutes each side. Try that meatball and see if you need to add anything to the mixture like more salt. We cook these in a really large stainless saute pan and cook them in batches of 6. Don't crowd the pan or they will not brown properly. Don't mix the meat and ingredients too much or it won't stay together in a ball.

Recipe:

Paleo Buffalo Burgers by Daniel Pardi

Ingredients:

2 lbs ground organic buffalo meat
1 diced medium red onion
4 crushed cloves garlic
2 organic eggs
1/2 cup flax meal
1/4 cup minced fresh parsley
salt & pepper to taste
2 tbsp coconut oil (refined or unrefined)

1 head of red or green leaf lettuce
1 thinly sliced avocado
1 thinly sliced tomato
homemade mayo (from coconut oil and olive oil), mustard & ketchup

Preparation:

Combine buffalo meat, onion, garlic, eggs, flax meal, parsley and salt
& pepper and knead together until well mixed.
Scoop about 1/2 cup of the mixture at a time and form 8 - 10 patties.
In a skillet melt coconut oil. When hot, lay patties in and cook for
about 5 minutes before flipping and cook for another 5 minutes on the
other side.
Remove and serve patties sandwiched between lettuce leaves. Add
avocado, tomato and condiments to taste.

Serves 6 - 8

Alternatively, this prepared buffalo meat mixture can be made into
meatballs, fried in a skillet, and served over roasted spaghetti
squash and tomato sauce.

LC Cocoa by Alyssa Palomares

INGREDIENTS
-6 - 8 oz. boiling water
-1 tbsp cocoa powder
-2 tbsp sweetener of your choice (I use Stevia in the Raw)
-2 tbsp softened extra virgin coconut oil OR 2 - 3 tbsp cream
-1/4 tsp vanilla extract
-Dash of salt

OPTIONAL:
-Whipped cream, for garnish
-1/4 tsp each cinnamon and cayenne pepper (WARNING: texture is a bit gritty if you add these; not sure how to get around it)

INSTRUCTIONS:
At the bottom of your mug, mix together the dry ingredients. Add the coconut oil or cream and stir into a paste. Add enough boiling water to cover the paste, and stir before adding remaining water. If desired, top with whipped cream.
It is VERY important that you do not pour all the water into the mug at once, otherwise it won't mix neatly.

Single-serving LC Brownie by Alyssa Palomares

I should note that this recipe was intended for a toaster oven, but it can be adapted for a regular oven. The original recipe was supposed to be microwaved, but that might dry out the brownie. The texture is more like a cake instead of an authentic brownie, but I'm not sure how to fix that. Some people might consider it dull by itself, so feel free to give it a frosting, mix in some chocolate chips, put low carb ice cream on top - whatever you like!

I wanted to give measurements for making multiple servings, but I'm not sure how that would affect the cooking time. I did increase the measurements to make two brownies once, but I don't remember how much I had to adjust the time or if I had to. Sorry if this is inconvenient! I know how inefficient it might be to heat up a regular oven for just one brownie.

INGREDIENTS

-3 tbsp butter OR coconut oil, softened - or you can use a mixture of both!
-1 egg
-3 tbsp coffee (black or with cream - instant is fine)
-1 tbsp cocoa
-2 tbsp coconut flour
-2 tbsp sweetener of choice (feel free to adjust to your liking)
-1/4 tsp vanilla extract
-Dash of salt

INSTRUCTIONS:

Preheat oven or toaster oven to 350 degrees Fahrenheit.

In a bowl, mix butter/coconut oil with the sweetener thoroughly. Add egg, and beat. Alternate between adding the coconut flour and coffee (in that order), 1 tbsp at a time. Add cocoa powder and vanilla extract, and mix thoroughly. Pour batter into a ramekin and put in the oven for 15 minutes, or until a toothpick inserted in the center comes out clean.

Alternatively, you can scoop the batter onto a cookie pan lined with aluminum foil to make pancakes. It might also work if you put the batter in a skillet, but I haven't tried that.

One large head of leaf lettuce or romaine lettuce
1 cup of Shredded organic cheese
1 ea Diced red and yellow peppers
1 Diced cucumbers
4 Shredded carrots
1/4 Diced red cabbage
One large lightly fried onions
2 Sliced Avocados
Medium size jar of organic salsa sauce
Small tub of organic sour cream
6 Scrambled eggs
 
Pre wash and dry the lettuce
Lay out all ingredients in separate dishes on table each with own spoon
Pile leafs of washed lettuce on separate plate
 
That's it.
About 8 servings
 
Kids love this! You can go wild with this and add just about anything. If you are vegetarian, add more veggies and make a guacamole as an additional binder.

Tossed Spice Chicken Thighs by Hunter Copeland


I'm  in favor of folks eating more fish as well as red meats, but this is an easy chicken recipe that my family seemed to like and I thought I would share.

Ingredients:

1 pound of chicken thighs (works w/ chicken legs)

dried rosemary

sea salt

black pepper

garlic powder

paprika

melted butter or coconut oil

Preparation:

Preheat your oven to 375 degrees. Pat the chicken legs dry. Brush with either melted butter or coconut oil and sprinkle with each spice. You may vary them depending on your taste preferences.  We have tried it with different spices and diffeent amounts.  It is good regardless. Sage and rosemary work well.  Bake the chicken in a shallow baking dish and when you notice liquid flowing from it, baste the droppings back over the top of the chicken.  Also,this recipes isn't as good with breast meat.  Use the fattier chicken parts -thighs or legs.

Recipes:

SPINACH LASAGNA

1 pound ground beef

2 tablespoons onion, chopped

1/8 teaspoon garlic powder

1/2 cup spaghetti sauce

8 ounces cream cheese

1 egg

1/8 teaspoon pepper

10 ounces frozen chopped spinach, thawed & drained

4 ounces mozzarella cheese, shredded

2 tablespoons parmesan cheese (I used the kind in a can)

Brown the hamburger with the onion; drain off the fat. Mix in the

garlic powder and spaghetti sauce; season to taste and heat until

bubbly. Meanwhile, soften the cream cheese in a medium-size

microwaveable bowl for about 40-60 seconds. Stir until creamy; beat in

the egg and pepper with a spoon until well mixed. Blend in the

spinach. Spread half of the meat mixture evenly in the bottom of a

greased, 8 x 8″ glass baking pan. Spread the spinach mixture over the

meat; top with the mozzarella, then the rest of the meat. It may not

completely cover the top, but that’s ok. Sprinkle with the parmesan

cheese. Bake at 350º about 30 minutes until hot and bubbly. Or, cover

with plastic wrap and vent one corner then microwave on HIGH for 3

minutes; then reduce to MEDIUM and cook for another 7-10 minutes until

hot and bubbly. Let stand 3 minutes before serving.

Makes 6-9 servings

Broiled Tilapia Parmesan
Ingredients:
• 1/2 cup Parmesan cheese
• 1/4 cup butter, softened
• 3 tablespoons mayonnaise
• 1-2 tablespoons fresh lemon juice
• 1/4 teaspoon dried basil
• 1/4 teaspoon ground black pepper
• 1/8 teaspoon onion powder
• 1/8 teaspoon celery salt
• 1/2 teaspoon paprika
• 1/4 teaspoon garlic powder
• Old Bay Seasoning to taste
• 2 pounds tilapia fillets
Directions:
1. Raise oven rack. Preheat broiler.
2. Line bottom of broiler pan with foil. Spray top lightly with Pam olive oil spray.
3. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise, and all seasonings EXCEPT Old Bay Seasoning. Add lemon juice to achieve desired consistency. Mix well and set aside.
4. Arrange fillets top-side up on the prepared pan. Sprinkle top side with Old Bay.
5. Broil a few inches from the heat for 2 1/2 minutes.
6. Flip the fillets over, sprinkle with Old Bay, and broil for 3 more minutes.
7. Remove the fillets from the oven, flip them, and cover them with the Parmesan cheese mixture on the top side.
8. Broil for 2 1/2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to overcook.
Cinnamon Pork Rinds
Ingredients:
• Pork rinds
• Olive oil
• Cinnamon
• Artificial sweetener (granule or powder form)
• 2 Ziploc sandwich bags
Directions: 
1.     Pour a little olive oil into a Ziploc sandwich bag. Press out all the air from the bag to ensure that the oil coats the inside of the bag.
2.     Open bag and drop in several pieces of pork rinds. Seal the bag and shake until pork rinds are coated. Remove the pork rinds and set aside.
3.     Using a clean Ziploc bag, dust the inside of the bag lightly with cinnamon and your artificial sweetener of choice.
4.     Drop the oil-coated pork rinds into the bag. Seal and shake bag until the pork rinds coated with cinnamon and artificial sweetener.
Low-Carb Chilli
Ground Beef (2 lbs)

minced onion (1/2 cup)

beef broth (1 box) I used a low sodium version

Rotel diced tomatos (1 can)

Salsa (1 jar medium and 1/2 jar hot Mama Lupe’s)

Chili Seasoning (1/2 teaspoon)

Cumin (1/2 tablespoon)

Oregeno (1 tablespoon)

Garlic Powder (1/2 tablespoon)

Black Soy Beans (2 cans)

When I serve it up for myself, I like to add a few jalapenos and
grated cheddar cheese on top.  Hope you like it!

Bryan's Pro-Biotic Ginger Bug, a recipe that is super simple and can heal / restore health!

Ingredients
2 teaspoons sugar
2 teaspoons grated ginger root (skin and all).
1 cup of spring or filtered water (not straight tap water).
Stir these ingredients in a cup (mason jar is best).

Every day or 2 add the same amount of ginger and sugar (and water as necessary).

This will start to bubble, then you know it's active and consuming the sugar.
You just pour a bit (spoonful) of the liquid into a glass of your drinking water, or any cool beverage really.

You'll be consuming just a tiny fraction of a teaspoon of sugar, but you're getting a healthy dose of probiotics.

Amazing!

This liquid can be used for many many purposes. Even making your own ginger ale (or ginger beer as it is called).

Pizza Peppers by Lynn Weiler

4 large 8 inch banana peppers..washed,topped, cut lengthwise and seeded.
Lay them on a foil lined cookie sheet and fill with your favoritw pizza sausage...it takes about a pound
Bake them at about 350 for a half an hour or until they are cooked through and browned on top

While that is baking, saute some coconut oil or butter in a pan with about a pound of sliced mushrooms and 8 diced roma tomatoes. Add 1.2 t basil and a pinch of oregano, salt and pepper, or what ever spices you love on pizza.

When the peppers some out of the over, put two on a plate, spoon the tomato mixture on top and then cover with parmesan cheese and mozzarella cheese.
I stuck them back in the warm oven for a couple minutes and wow...I will never miss a pizza crust again.

Low Carb Slow Cooked Italian Style Stuffed Peppers
by Wendy McCullough
4 bell peppers, halved, seeds and membranes removed
1 1/2 pounds ground beef
1 cup pork rinds
1/4 cup Parmesan cheese
1/2 cup no sugar added spaghetti sauce
1 clove garlic, minced
1 tsp. Italian seasoning
1/3 cup shredded mozzarella cheese
Place ground beef in bowl.  Crush pork rinds to form crumbs and place in bowl with meat.  Add Parmesan, spaghetti sauce, garlic, and Italian seasoning.  Mix til well combined.  Put meat mixture in bell pepper halves and place in crock pot.  Sprinkle cheese on top.  Cook for about 4 hours on high til peppers are tender and meat is cooked.     

Roasted Salmon

2 large bunches fresh rosemary
1 medium onion, thinly sliced
4 salmon fillets with skin
2 lemons, thinly sliced
1/2 cup unsalted butter, divided into 4 pieces

Preheat oven to 450°F. Arrange half the rosemary sprigs in a single layer in center of casserole
dish. Arrange sliced onion atop rosemary. Place salmon, skin side down, atop onion. Sprinkle
with sea salt and pepper. Place piece of butter atop each fillet. Cover with remaining rosemary
sprigs. Arrange lemon slices over rosemary.

Roast salmon until just cooked through, about 20 minutes. Transfer salmon to plates. Serve with
roasted onions and lemon slices.

Mousse au Chocolat Recipe

Mousse au chocolat is a traditional French dessert. I have seen U.S. recipes (like Alton Brown's version) that are nothing like a real French mousse. And guess what? A real French mousse au chocolat is also a fairly low carb treat. Now, this is not a low carb recipe blog, but since I am in Belgium, where I can easily buy 70% or more dark chocolate (which is lower in sugar and high in cocoa butter), I will post one anyway.

The recipe below uses 70% dark chocolate Belgian chocolate (see nutritional information) but you can also make it with 86% dark Belgian chocolate (see nutritional information).  Ghiradelli also sells dark chocolate, if you cannot easily find dark Belgian chocolate. But it and other brands (e.g., Lindt) have soy lecithin in it. Whatever brand of dark chocolate you use, make sure cocoa butter is listed on the label. It is found only in high quality chocolate.

Ingredients:
100 grams (3.52 ounces) of dark chocolate (this recipe assumes 70% dark Belgian chocolate)
1 tablespoon butter
2 eggs

Melt the chocolate in a double boiler over water that is simmering, but not boiling. Add butter to the melted chocolate. Note: good Belgian chocolate has a lower melting point than U.S. chocolate and the melted mixture should not be too hot, so it won't cook the egg yolks.

Separate the two eggs. Beat the egg yolks then mix them into the melted chocolate until it is smooth, and without lumps.

Whip the egg whites until stiff peaks form. Gently fold the whites into the chocolate mixture.

Divide into three dishes and refrigerate for three or more hours. Each mousse will have about seven net grams of carbs per serving.

I usually consume fewer than 30 grams of carbs per day, so this would be about a fourth of my daily total. Therefore I would not recommend eating it very often, but it is a nice way to occasionally treat yourself to some dark chocolate, which is high in healthy cocoa butter.

Shrimp Cocktail Sauce

Take 6 to 8 ripe, medium sized tomatoes. Peel and seed the tomatoes.
Pulse the tomatoes in your food processor (but do not puree; leave chunks).
Add 1/4 cup pure horseradish (or perhaps a bit more, if you like more bite to your sauce)
Salt and pepper to taste.  
Juice from 1/4 lemon
1 Tablespoon of Worcestershire sauce (optional).

Then stir it all together. Makes about one cup of cocktail sauce for your cold, boiled shrimp. Without using processed and carb-laden ketchup.

We discovered that it tastes better if it has had a while for the flavors to mix, so prepare some a few hours before you need it. And we sometimes needed to put the sauce on the shrimp with a spoon, but it was really good. It also avoided the necessity of making cocktail sauce with ketchup.

Recipe:

Crustless Spinach Quiche

1 tablespoon butter
1 tablespoon olive oil
1 large onion
1 red pepper - diced
Dice onion and red pepper and sauté in butter and olive oil until softened.

1 (10 ounce) bag of frozen spinach (thaw
and squeeze to remove excess water) OR
1 package of fresh spinach OR 1 cup of
broccoli chopped finely
Add spinach and continue to sauté for about minutes or until wilted.
6 eggs, beaten
1 cup cottage cheese
2 ounces mozzarella cheese
2 tablespoons heavy cream
½ teaspoon salt
¼ teaspoon pepper
½ cup cheddar cheese - grated
Beat eggs all together in bowl. Add cooked veggies to egg mixture. Add cottage cheese, cream and mozzarella cheese. Add salt. Pepper and any spice of choice. Pour in 9” pan. Bake at 350 degrees for 40-45 minutes. Makes 6 servings

Recipe:

Makes 2-3 normal servings or 1 post-WOD serving

All ingredients are from Trader Joe’s, but any store will do

Ingredients:

1 lb grass-fed ground beef

2 tbsp coconut oil (not from TJs, but you can find it at Whole Foods or onlinehere

1 jar Tomatillo and Roasted Yellow Chili Salsa

3 tsp cumin

1/2 tsp black pepper

1/4 tsp salt

dash of oregano

1 spaghetti squash

Directions:

Poke a number of holes into the spaghetti squash with a fork to release pressure while cooking. Put the squash in the microwave for 15 minutes, rotating every 3.

At the same time, brown the ground beef on medium in a skillet with 3 tbsp of coconut oil. When the beef is halfway done, add the cumin, pepper, salt and oregano. Finish browning the beef, turn the heat to low, and add the jar of salsa. Let this simmer for an additional 5-10 minutes until it thickens.

When the spaghetti squash is done, remove it from the microwave (carefully, it will be hot). Slice off the end caps and cut in half length wise. With a fork, remove the seeds and fibers from the center. Again with a fork, scrape the remaining squash into a new container. Here, you can choose to continue cooking the squash in the microwave with additional oil for 15 more minutes, or pan fry it. The consistency should be soft with a slight crunch to it.

When done, the beef can be served on the bed of squash or mixed together, either hot or cold.

Low Carb BBQ Brisket Prepared in a Smoker and Cooked Twice

 

Since this recipe is nothing but meat (and rub) it is low carb.  I use an electric smoker to get the smoke flavor and also to produce a flavorful “bark” (blackened outside surface) that provides a great deal of flavor.  Since briskets come in 8 to 12 lb. sizes, this makes enough meat for several meals.   Portions can be easily frozen for use later on.

 

 

 

Low Carb BBQ Brisket Recipe, Double-Cooked in a Smoker

Serves: 12
Low Carb BBQ Brisket (Smoked Beef Brisket) prepared in a Smoker and double-cooked to provide tasty Burnt Ends. This recipe provides tender sliced BBQ beef and chopped BBQ beef.
A smoker is used in this example, however an oven or roaster oven can be used with liquid smoke to obtain the smoky flavor. The oven approach won’t provide as much of the “bark” outer surface characteristic of smoked beef.
Ingredients
  • 8-12 lb. Beef Brisket with the “fat cap” (see Notes) (Select or Choice Grade)
  • Dry Rub (Gordons Grub Rub)
  • Optional Spices for Chopped Brisket (be careful to just spice lightly to punch it up):
  • Coarse Pepper
  • Coarse Sea Salt
  • Onion Flakes
  • Dried Tomatoes (Sprinkles – in a ground form)
  • Cayenne Pepper
Instructions
  1. Set Smoker to 225 Degrees
  2. Wash the brisket with water and dry off
  3. Rub in the dry rub on all surfaces of the Brisket, especially the fat side
  4. Put the Brisket into the Smoker (fat side up) and leave for 1.25 hr. per lb. (i.e. 12.5 hr for a 10 lb brisket)
  5. Remove the Brisket from the smoker and remove the “flat” (Video 2) for refrigeration/freezing and use later.
  6. Immediately wrap the “fat cap” in aluminum foil (two or three layers – Video 2)
  7. Put the fat cap back into the smoker for another 1.25 hr. per lb. (i.e. 12.5 hr for 10 lb brisket)
  8. Remove the fat cap from the smoker, remove meat from it (see video), and chop it up.
  9. Combine all of the chopped fat cap (burnt ends) with some of the flat (chopped) and spice very lightly with the optional spices of your choice to produce chopped BBQ beef.
  10. A suggestion is to save half of the flat for slicing and use as a more formal sliced BBQ entree.

Check the “trim” of the brisket: Sometimes the fat on both sides is completely trimmed off, which is NOT what you want. You want a brisket that has one lean side with the fat trimmed off (called the flat) and one fatty side that has fat over the entire length of the brisket. On the fatty side there should be a thick knot of fat at one end, sometimes intermingled with meat, called the “fat cap”.

Plan ahead: The brisket will be in the smoker for a long time – two long stretches. You don’t want to end up messing with it in the middle of the night. For briskets, 2 hours or so of smoke is about right, so after you’ve finished the smoke phase, you may, if you prefer, transfer the brisket to a preheated oven or roaster oven for the remainder of the cook time, wrapped in aluminum foil in a deep pan to catch the juices.

Debbie Hubbs and Monique Forslund join Jimmy and Mindy (and Christine) for the last of our segments from the 2011 Low-Carb Cruise!

We've got some great recipes today, including a mock Pita for sandwich wraps courtesey of Monique (get the directions here: http://www.lifezone.se/en/food-tips/moniques-very-popular-egg-wraps-3061144) and Debbies crowd pleasin' tongue teasin' Oopsie Rolls which can be made as hamburger buns/deli rolls or as desserts!

Recipe:

Oopsie Rolls

4 eggs (at room temperature)
4 oz cream cheese
1/8 tsp cream of tartar (optional, won't affect the recipe if not used)
1 level scoop vanilla whey protein powder (to give it more of a “bread” texture)

1. Separate eggs into 2 bowls; use glass or grease free metal for the egg whites.

2. Beat the egg whites & cream of tartar until stiff peaks form.

3. In 2nd bowl, beat yolks together with cream cheese and protein powder.  If you want your oopsie for dessert – add splenda or cinnamon or cocoa powder.  Or add garlic powder, pepper, cheese, etc for a more savory oopsie.  Or leave plain.

4. Carefully and slowly fold the yolk mixture into the egg whites.

5. Spray cookie sheet, or muffin top pan with a non-stick cooking spray.  Drop mixture onto cookie sheet or muffin top pan.

6. Bake in a 300 degree oven for 30 to 40 minutes .

Cool completely before storing. To store, layer between sheets of parchment paper, wax paper or non-stick foil.  Place in a gallon baggie in the refrigerator leaving the baggie open overnight which causes them to dry out a bit which makes them more of the consistency of bread.  Can freeze.  OK to double or triple recipe.
 
Makes about 10-12 small rolls.
