Utensils to make these bars: Whisk coconut oil, nut butter and protein powder in a medium bowl until smooth. Add remaining ingredients an stir. Line baking sheet/cake pan with parchment paper, making sure it goes all the way up the sides. Pour in batter, and don't let the batter touch the actual pan or it will be very messy to remove. Cover and refrigerate for about 2 hours or until solid. Lift bars out with parchment paper underneath and cut into squares on a cutting board (as pictured above). Store bars in refrigerator! This recipe must be kept pretty cold. If they get too warm, the coconut oil will melt and they will turn back into a puddle. |

FILLING: Line the base of an 8-inch spring form cake tin with baking paper and grease the edges with a little coconut oil. Place all of the base ingredients into your food processor. Whiz these ingredients until a smooth paste forms. Press the base in to the cake tin, making sure you press it out evenly, covering the entire base. Place in to the freezer. For the filling, place all the filling ingredients into the food processor and whiz. Whiz until completely smooth, this will take around 5 minutes. Take the base out of the freezer and pour the filling on top of the base. Shake the tin to even out the top and place the cake in to the fridge for around 1 1/2 hours or until set. Rub the outside of the cake tin with a hot cloth and release the spring form slowly. Cut into slices with a hot knife and store any left overs in an airtight container in the fridge or freezer. |
