Zucchini Pasta with Chicken & Pistachios
Recipe from Well Fed Weeknights: Complete Paleo Meals in 45 Minutes Or Less by Melissa Joulwan

This recipe is an homage to the pasta recipes that show up on food magazine covers every spring. You know the ones: They feature a bowl of pasta flecked with herbs and golden chicken—and smiling, painfully chic people gathered around a picnic table on a hillside, all bathed in dappled sunlight. It makes you want to immediately pack a bag and buy a ridiculously expensive last-minute ticket to Tuscany. I’m here to remind you of a few key points: (a) Plan your trips more deliberately than that; (b) You are equally as stunning as those people; and (c) This recipe is a mini vacation anytime you need it.

Serves 2–4
Total time: 35–40 minutes
Tools: spiralizer, meat hammer, colander

INGREDIENTS:
NOODLES:
2–2 1⁄2 pounds zucchini
1 tablespoon salt
1 tablespoon extra-virgin olive oil
2 cloves garlic
1⁄4 teaspoon ground cumin
1⁄4 teaspoon ground black pepper

CHICKEN:
4 boneless, skinless chicken breasts (4–6 ounces each)
1 tablespoon extra-virgin olive oil or ghee
1 teaspoon salt
1⁄2 teaspoon ground black pepper

AROMATICS:
2 scallions
7–10 fresh mint leaves
1⁄4 cup shelled pistachios
1 tablespoon lemon juice

Prep the noodles. Julienne the zucchini with the spiralizer. Place the noodles in a colander and toss them with the salt until the strands are lightly coated. Set the colander in the sink to drain while you prep the other ingredients.

Cook the chicken. Pound the chicken to 1⁄2-inch thickness between two pieces of plastic wrap with the smooth side of the meat hammer, then slice it crosswise into strips. Warm the olive oil in a large, nonstick skillet over medium-high heat, 2–3 minutes. Add the chicken, sprinkle it with the salt and pepper, then toss to coat it in the oil. Spread the chicken in a single layer and let it cook undisturbed, 2–3 minutes. Flip with a spatula, separating the pieces and cook for an additional 2–3 minutes on the other side. Continue to flip and cook the chicken until it’s browned and sizzling on most sides, about 2 minutes more. Transfer the chicken to a plate and cover it loosely with aluminum foil.

Prep the aromatics. Thinly slice the scallions, mince the mint leaves, and coarsely chop the pistachios. Add everything to a bowl with the lemon juice, mix with a fork, and place nearby because the next part goes quickly.

Finish the noodles. Place the olive oil in a small bowl. Peel and crush the garlic, then add it to the bowl with the oil. Add the cumin and pepper to the bowl, mix with a fork, and set it nearby. Rinse the zucchini noodles under running water, drain them well, and squeeze them in a clean dish towel to remove excess water. Return the skillet you used for the chicken to the stove and reheat it over medium-high heat, 2–3 minutes. Place the prepared zucchini noodles in the dry pan and sauté them until just tender, 2–3 minutes. Push the noodles to the side of the pan, and reduce the heat to medium low. Add the garlic oil to the pan and cook for 20 seconds, stirring constantly. Push the zucchini noodles into the oil and stir gently until they’re coated. Turn o the heat and add the chicken to the noodles, along with the mint-pistachio mixture. Toss to combine.

To serve, divide the pasta among individual bowls and arm everyone with a big spoon to twirl the strands.

Michelle's Veggie Loaded Shrimp and "Grits"

"Grits"
Heat 1 cup of chicken broth and 1 cup of heavy cream (or water or almond or coconut milk depending on your preference), and 2 tablespoon of butter to a slow boil. Add Adapt Meal and stir, to thicken add additional Adapt Meal, for a thinner consistency, add additional liquid. (The cereal can be ordered from adaptyourlife.com.)

Shrimp and veggies
2 tbsp butter
1/2 cup sugar snap peas
1/2 cup of cherry tomatoes cut in half
12 jumbo shrimp
Salt and pepper to taste

Heat skillet over medium heat and coat with butter. Add sugar snap peas and cherry tomatoes and cook until slightly wilted. Add shrimp and cook until opaque. Season as desired. Serve over "Grits." Serves 2.

Martina's Delicious Lemon Fat Bombs

8-9 oz of coconut butter
2 oz of coconut oil
Lemon zest from one organic lemon
2 table spoons of juice from the zest lemon
15 drops of stevia (natural or vanilla suits well) you can replace stevia with xylitol.

Warm the coconut butter and the coconut oil in a pan. Don’t boil, just heat it up a bit until it turns liquid. Pour it in a blender together with the zested lemon, lemon juice and the sweetener and blend until smooth. Pour into silicon molds and refrigerate until solid. This will take about an hour. Enjoy!

Anna's Apple Prosciutto Wrapped Chicken Breast with Apple Vinegar Brussels Sprouts
Apple Prosciutto Wrapped Chicken Breast
2 boneless skinless chicken breast (approx 1 lb)
6 ounces of prosciutto
1-2 ounces shaved apple
1 tablespoon melted grass-fed butter or ghee
Himalayan Pink Salt
Black Pepper

Preheat oven 350 degrees. Pat chicken breast dry and then brush with melted butter. Sprinkle with salt and pepper to taste. Use a peeler to shave apple very thin and place over the top of chicken breast. Wrap chicken breasts with prosciutto slices. Bake uncovered for approximately 45 minutes.

Apple Vinegar Brussels Sprouts
3-4 cups Brussels sprouts
1/3 cup apple vinegar
2/3 cup extra virgin olive oil
1/4 teaspoon cinnamon
Himalayan Pink Salt
Black Pepper

Slice Brussels sprouts in 1/2 place in steamer and steam until tender. Whisk vinegar, oil and cinnamon until blended and toss over Brussels sprouts. Salt and Pepper to taste.

Kim's Keto Pancakes
3 large eggs

1/3 c pure full fat unsweetened coconut milk

1 tbsp. coconut oil
1 tsp. Stevia or Splenda (can use drops
)
1 tsp. vanilla

¼ tsp. apple cider vinegar

1 ½ c. almond flour

½ tsp. soda

¼ tsp. salt

Mix ingredients and pour into skillet. ENJOY!

Kristen's recipe requires a dairy-free sour cream, so here's the recipe for that:

Dairy-free Sour Cream
2/3 cup avocado oil
1 egg (preferably pasture-raised)
1 teaspoon lemon juice
½ teaspoon mustard powder
1 teaspoon garlic, minced (approximately 1 clove)
¾ teaspoon sea salt
2 tablespoons plus 1 teaspoon fresh lime juice
¼ teaspoon nutritional yeast

Place the avocado oil, egg, lemon juice, mustard powder, garlic and salt in a tall container (I use a 2 cup Pyrex measuring cup). Place an immersion blender at the bottom and turn on. Once the mixture starts to blend together and become thick, move the immersion blender towards the top, until it is well blended. This should take less than a minute! Add the lime juice and nutritional yeast and blend once more. Enjoy!

Loaded Mashed Cauliflower with Bacon & Green Onions
(Recipe from the Ditch the Wheat cookbook by Carol Lovett

Yield: 4 servings Prep time: 10 minutes Cook time: 15 minutes

I am a huge fan of pureed cauliflower. I like it even more than the mashed potatoes it’s often meant to replace. With this recipe, I took plain pureed cauliflower and kicked it up a notch by pairing it with bacon and green onions. You’re going to love it!

Ingredients:
1 medium head cauliflower (about 1¾ pounds), cored and chopped into 1-inch
pieces
½ medium onion, chopped
¼ cup (½ stick) unsalted butter or ghee
1 teaspoon fine sea salt
4 slices bacon, cooked and finely chopped
4 green onions, finely chopped

Directions:
1. Place the cauliflower and onion in a 3-quart pot with enough water to cover and bring to a boil. Boil for 15 minutes, or until the cauliflower is tender. Drain the water from the pot.
2. Add the butter and salt to the cauliflower. Puree with a hand blender, or transfer the ingredients to a food processor and pulse until smooth.
3. Reserve some of the bacon and green onions for garnish and stir the rest into the cauliflower puree. Top with the reserved bacon and green onions and serve immediately.

Alison’s Homemade "To Live For" Keto Fat Bomb Brownies

Melt in bowl over pan of simmering (but not boiling) water:
1 pound grass-fed butter
9.7 or 10 ounce 100% good baking chocolate broken into chunks
pinch of salt
Tablespoon of Vanilla

Remove from heat/water
Stir into chocolate mixture - 2 cups of Swerve
Add optional 1-2 cups of pecans or walnuts
In separate bowl, beat 8 room-temperature pastured farm eggs
Very slowly, drizzle in chocolate mixture while whisking vigorously (this keeps eggs from cooking)
Mixture should thicken considerably
Pour into TWO heavily greased 6x8 Pyrex glass containers (I love the ones with lids for storing later)
Bake at 325 for about 25 minutes. brownies should be very giggly when you remove them.
Cool in pans, top with lid, and refrigerate until use. You can also freeze one for later.
For eating - cut into squares. Heat for 5 seconds in microwave or bring to room temperature. Top with whipped heavy cream or cream cheese.

Maria's Coconut Curried Shrimp
2 lbs wild shrimp, peeled, deveined
2 Tbs coconut oil
1 small onion, diced
1-2 cloves of garlic, minced
1 T red curry paste (I use Thai Kitchen brand)
1-2 tsp sriracha sauce
1-2 tsp raw honey
Juice of 1 lime
Salt and pepper
1 can of coconut milk, preferably native forest brand, full fat
Fresh cilantro and basil, chopped

Sautee shrimp in coconut oil until opaque, a few minutes, over medium heat. Set aside. Sautee onion for a few minutes, add red curry paste and sautee until it smells heavenly, which will happen in 60 seconds flat!---Now add in minced garlic so that it doesnt burn and sautee for 1 minute

Add can of full fat coconut milk. Add honey, sriracha, lime juice and salt and pepper as desired.

Add shrimp back to this pink tinged heavenly sauce and simmer for about 10 minutes.

Add in cilantro and basil as soon as you turn off the heat.

Serve over "riced" cauliflower-- Here's an easy recipe--- pulverize cauliflower in a food processor until it looks like rice grains. Sautee in a pan w some coconut oil. Add chopped cilantro if desired. Season with salt and pepper
