CAMILLE'S BLAT OMELET WITH GARLIC AIOLI RECIPE

Serves 2

BLAT, if you’re not familiar, stands for BACON-LETTUCE-AVOCADO-TOMATO, and is typically an upgrade to the famous BLT sandwich. Here’s my take using eggs, glorious eggs! This is the best low-carb breakfast on the block.

6 eggs
1/4 cup chopped green onions
Butter, for cooking eggs
6 slices applewood smoked bacon, cooked crispy and crumbled
2 avocados, diced small
1/2 cup grape tomatoes, cut in half
1 teaspoon lemon juice
1/2 teaspoon Spike or other seasoned salt
1 cup arugula
2 tablespoons Balsamic Reduction (Trader Joe’s and some other markets carry a Balsamic Glaze if you want to skip this step)

Heat a 9-10 inch skillet on medium-high heat. Add about a teaspoon of butter. Whisk eggs in a medium bowl. Add half of the eggs to the hot pan and sprinkle with green onion, salt, and pepper. Turn to low and cover, allowing the steam to cook the top of the egg. You can get crazy and try to flip it, but you risk breaking it. Toss avocado, tomatoes, and arugula with lemon and seasoned salt. Laura's Sauced Pork Chops
Over medium-high heat, place pork chops seasoned with salt and pepper in skillet and cook about 4 minutes each side depending on thickness. Make sure skillet is hot so you can get a good sear. When they're mostly done, remove and cover or put in warm oven.

De-glaze the pan with chicken stock, bone broth, or white wine and scrape up all the bits at the bottom of the pan. Reduce to a simmer and whisk about 1 1/2-2 Tbs of Dijon mustard into about 1/3 cup of heavy cream and then dump that into the pan. The sauce will thicken up in a minute or two and just pour it on top of the meat and steamed veggies.

Recipe:

Rachel Flowers Yellow Squash Casserole

Makes 10 servings

5 lbs yellow squash
2 eggs
almond meal (optional and totally not needed, I grind my own, though, too)
4 ounces butter
1/4 cup maple syrup2 teaspoons salt (I use celtic sea salt)
2 tablespoons finely chopped onions
1 dash pepper

Directions:

1. Cut the tops off the squash.
2. Cut in 3- 4 pieces.
3. Boil in water til tender (just a few minutes).
4. Drain and mash.
5. Add remaining ingredients.
6. Place in casserole dish.
7. Cover with the light layer of almond meal.
8. Bake at 350 til lightly browned (about 10- 15 minutes).

* I boiled, drained, Mashed, Drained then baked 30 mins 350F

Recipie:

Gina Reig's Creative Curry Clafouti

(As we discussed during the show, it is pronounced "cla-FOO-tie," and it's kind of like a quiche. It keeps well and is super yummy!)

Ingredients:

• 6 eggs
• 6 tablespoons melted grass-fed butter/ghee/coconut oil cooled to room temp. + 1 pat for greasing pan
• 3/4 cup coconut milk
• 4 cups cooked, chopped chicken (optional) You can sub any cooked meat and/or greens, onions, etc.
• 2 tablespoons curry spice, or to taste
• Sea Salt & Pepper to taste

Directions:

• Preheat oven to 400° F.
• Butter a 10” round or 13×9” baking dish
• Whisk together eggs, fat & coconut milk until frothy.
• Mix in chicken or other meats/veggies and spices and pour into baking dish.
• Bake about 45 minutes or until top is golden brown and puffy.

"BE CREATIVE WITH THIS! YOU COULD USE HERBS INSTEAD OF SPICES. THE EGGS, COCONUT MILK, SEA SALT AND FAT ARE THE NEEDED COMPONENTS. FROM THERE, YOU CAN BE SUPER CREATIVE!"

Today's recipe is Adam's dad's pot roast from their book, The 12 Essential Low Carb Cooking Skills: Plus, 49 Simple, Scrumptious Low Carb Diet Recipes.

Pot Roast (Serves 4 to 6)

Pot roast is a good simple one-pot meal that requires a minimum of fussing. Like any braise, it takes some time to prepare. It is easily prepared in a slow cooker. (Follow manufacturer's directions for cooking time and temperature.) This recipe is very basic, but fail-safe.

Ingredients:
1 (3 to 4 lb.) pot roast (chuck, top or bottom round)
2 tablespoons extra virgin olive oil
1 (14 1/2 ounce) can chopped tomatoes
2 cups beef stock
2 onions, coarsely chopped
2 garlic cloves, chopped
3 large carrots, peeled and cut on the bias into 1" pieces
2 celery stalks, chopped
4 ounce cremini mushrooms, quartered
1 tablespoon herbs de province
2 bay leaves
Kosher salt and pepper
Chopped flat-leaf parsley, for garnish

Preheat the oven to 375 degrees. Season the meat on all sides with salt and pepper. In a Dutch oven, brown the meat on all sides in the extra virgin olive oil. Add the tomatoes, the onions, the herbs de province, the bay leaves and the rest of the veggies. Make sure all the herbs and veggies are immersed in the liquid. Bring back to a boil. Tightly cover the pot and place it in the oven. Roast for about 3 hours, or until the meat is tender. When done, remove the pot from the oven. Remove the meat and allow it to rest on a cutting board. If the jus is too thin, return the pot to the stove top and boil to reduce it. The jus should be thin but well-flavored. Correct the seasoning. Slice the meat and serve accompanied by the veggies and jus, garnished with parsley, or, you can serve a few chunks of the beef atop some pureed veggies with a bit of the jus over top and garnished with the parsley (yum!).

Recipe:

LOW CARB CHICKEN FAJITAS
INGREDIENTS
▪ 1 medium chicken breast
▪ 1 lettuce
▪ 2 tomatoes
▪ 1 red pepper
▪ 1 birdseye chilli
▪ 1 small red onion
▪ ½ avocado1 lime
▪ 1 tablespoon of olive oil
DIRECTIONS
Cut 1 tomato, ½ red pepper, birdseye chilli and red onion to make a salsa. Spoon out the avocado and chop up the other tomato, mix those together, squeeze the lime in and mash it up to make a guacamole.
Slice the other ½ of the red pepper and chicken into strips. Fry them in the olive oil. Once cooked put on a separate plate. Now comes the low carb bit. You'll be using the lettuce leaves as tortillas to make the fajitas. With a leaf in hand spread on some salsa, guacamole and place some fried chicken peppers on top. Roll it up and eat it up, but be careful  as I have had salsa juice run down my top on a couple of occasions!
