Katie's Cauliflower Mac & Cheese
1 head cauliflower
1/4 cup butter
1 cup shredded cheese (I used a half a bag of trader joes shredded 3-cheese)
Handful of shredded Parmesan
1/4 cup whipped cream cheese
Cayenne pepper, salt+ pepper to taste
Finely chopped walnuts

Preheat oven to 375 degrees.

Chop cauliflower into noodle sized pieces. Microwave cauliflower (covered in plastic wrap) for 6 minutes. Add butter, shredded cheese, Parmesan, cream cheese, cayenne, salt and pepper and mix together. Top with walnuts (plus extra shredded cheese and Parmesan). Place in oven for 10 minutes.

Alix's Liquid Fat Bomb - Keto Old Fashioned Cream Soda
One can of club soda
1/2 cup of full fat whipping cream (more if you like!)
1/2 tbsp all natural vanilla flavouring (I order from Arizona Vanilla Co.), OR a few drops of vanilla stevia (I use Sweet Leaf), to taste

Merlin's Stupidly Easy Spicy Mayonnaise
1 whole egg
3/4 cup Avocado Oil
1 tbsp Frank's Red Hot sauce (get the original, all of the new variants have crappy additives in them. the original is just cayenne peppers, vinegar, water, salt and garlic)

Crack the egg into a glass bowl, add the oil and hot sauce. Place a stick or immersion blender directly over the egg yolk. Blend on High. When you see the emulsion coming out from the sides of the blender, stir it around to incorporate the oil and hot sauce. See? Stupidly Easy!

Courtney's Snackmonster (Grain-Free) Granola

Dry ingredients:
1c almond meal (coarse ground such as from Trader Joes)
½ c flaxseed meal
1 Tbsp cinnamon
2 tsp sea salt- more to taste
1 c shredded unsweetened coconut
¼ c sunflower seeds (or any other seeds/nut of a similar size such as pumpkin seeds, cashew pieces, slivered almonds)
~2 c mix unroasted, unsalted nuts (combo of almonds, pecans, walnuts is my favorite)
1 big handful of dried wild blueberries (or other dried fruit diced up)

Wet ingredients:
1 Tbsp vanilla
½ c coconut oil in solid form
¼ c + 1 Tbsp honey

1. Preheat oven to 300 degrees and line a large baking sheet with foil (this makes for easier clean up).

2. Mix all dry ingredients (EXCEPT dried fruit) in a large bowl.

3. Melt coconut oil in microwave. Mix in the honey and vanilla and then stir into the dry until everything is moistened.

4. Use a spatula to spread granola evenly on the baking sheet.

5. Bake for 15 minutes. Remove from oven. Gently stir and flip in sections.

6. Increase temperature to 325 degrees.

7. While oven temp increases sprinkle your dried fruit over the just flipped granola and press down into the granola with a spatula.

8. Return to the oven for about 10 minutes. Keep an eye on it, you don’t want it to darken too much and taste burnt.

9. Once removed from the oven let it cool, this is what will let it get crunchy.

10. Enjoy over full-fat yogurt, cottage cheese, with almond milk, or just by itself!

Lindsey's Cauliflower Taco Shells
3/4 head cauliflower
2 large eggs
1/4 cup chopped cilantro
1 juiced lime (I also zest the lime for more flavor)
Sea Salt (to taste)

1. Preheat over to 375 degrees
2. Cut cauliflower into small uniform pieces, and pulse in a food processor in batches until you get a good consistency. This should make about 2 cups.
3. Place cauliflower in a bowl and microwave for 2 minutes, then stir, and microwave again for another 2 minutes. Then place cauliflower on thin cloth to squeeze as much liquid out as possible.
4. In a different bowl whisk eggs and add incauliflower, cilantro, lime, and salt. Mix
5. Form mixture into tortillas
6. Bake for 10 minutes, flip tortillas, then bake again for another 5 minutes. Set on cooling rack.
7. Heat a skillet and place a baked tortilla in the pan and brown for 1-2 minutes, flip and repeat.

Ellie's LCHF Meatballs
1 lb ground beef
1 lb ground hot/spicy italian sausage (if you can’t find ground, slice open cased sausages, and you can use regular italian sausage or another pound of ground beef)
2/3 cup Parmesan cheese
1/3 cup almond flour
1 egg
1 T minced onion
2 t garlic powder
1 T italian seasoning

Preheat oven to 450 degrees. Mix all ingredients together well. Form into golf-ball sized balls and place into large baking dish. Bake for 20 minutes or until cooked through.

Debbie's Ranch Chicken
1-2 lbs boneless chicken thighs
1 cup chopped mushrooms
1 8 oz bottle of ranch dressing ( I make my own ranch)
i pkg cream cheese
1 1/2 c mozzarella shredded

Place chicken incrock pot with the mushrooms and ranch dressing, cook on high for 4 hours. After the 4 hours, add the cream cheese and mozzarella cheese stir and cook til melted and heated through. Serve with cauliflower rice or by itself. Yummy!

JOE'S BEEF STEW RECIPE
3 pounds pastured stewing beef
3 cups of beef stock (or 2 cups stock and 1 cup wine)
1 tablespoon balsamic vinegar
1 medium onion, chopped
3 stalks of celery, roughly chopped
3 large carrots, peeled and chopped
3-5 small potatoes, cubed (optional)
1 to 3 cloves of garlic, minced (adjust according to your taste)
1 tablespoon of paprika
3 bay leaves
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1 teaspoon each dried rosemary, basil, and oregano
2 tbsp chili powder
2 tbsp ground cumin
1/2 tsp cayenne pepper

This isrecipe is so easy and well rounded (from both a macronutrient and micronutrient point of view) and you don't have to cook for a couple of days after making it. Throw all ingredients into the slow cooker for 8 hours and EAT! BOOM!

Heather's Fluffy Chestnut Flour Pancakes
4 eggs
1/4 cup coconut milk
3/4 cup chestnut flour
1/4 cup coconut flour
1/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon apple cider vinegar

Whisk eggs. Whisk in coconut milk. Beat in flours and salt. Stir in baking powder and vinegar. Pour by 1/4 cupfuls onto a hot oiled griddle. Cook until bubbles form and pop. Flip and cook until lightly browned. Serve and enjoy! Makes 8 pancakes.

EILEEN'S LOW-CARB FAUX POTATO SALAD

Summertime is Potato Salad time for many of us. With this recipe you can enjoy the taste of traditional potato salad without the nasty blood sugar spike and subsequent weight gain or stall. Everyone loves this new summertime favorite! I love this excellent low-carb dish and have brought it to many summer events. Faux Potato Salad, using cauliflower.

1 head cauliflower
1/2 red onion-chopped
1/2 green pepper-chopped
3 stalks celery-chopped
5 hard boiled eggs-3 chopped, 2 sliced for top
1 cup mayo
tbsp. mustard
3 dill pickles-baby dill-chopped

Steam cauliflower for about 20 minutes. Run under cold water to stop cooking. Drain well. Once cooled, chop into bite size pieces. Combine all ingredients inlarge bowl, saving 2 sliced eggs fortop. Chill in fridge for 1 hour. Serve and ENJOY!

PUMPKIN AND SPINACH FRITTATA by Anne Franklin

Prepare a large baking dish by brushing with melted butter. I often line my dish with baking paper instead as it saves scrubbing later.

Preheat oven to 340 degrees Fahrenheit

Ingredients
400g roasted chunks of pumpkin
200g spinach
120g blue cheese or feta, (diced or crumbled)
12 eggs
50 ml heavy whipping cream
120g creamy blue cheese or feta
100g diced bacon
1 tomato
200g grated cheese
seasoning and herbs to taste

I usually cut my pumpkin into 1 -2 inch pieces. I toss the pieces in a little olive oil, seasoned herbs such as Tuscan seasoning, and bake in the oven until soft. Better still is to bake extra when roasting veggies for dinner the previous day.

Layer the pumpkin and spinach in your baking dish with pieces of the creamy cheese or feta. Beat the eggs together with the cream. Pour the eggs over the veggies. Scatter the pieces of bacon over. Slice tomato and place over the dish. Sprinkle grated cheese over.

Bake in a moderate oven until firm. and the cheesy top is golden. Takes 30 to 45 minutes depending on the depth of the dish. Great as a main meal with salad and slices well when cold to make an ideal picnic food.

MaryLou's Faux Scalloped Au Gratin Potatoes
1 Celery root or Celeriac peeled, cleaned and sliced (I use a mandolin and slice the pieces thin and then cut them into smaller pieces)
4 tablespoons of butter (I use Kerrygold unsalted)
1 cup of heavy cream
Garlic powder
Salt
Pepper
1/4 cup Parmesan
1/4 cup Romano
1/4 cup Mozzarella

Put all ingredients, except cheese, in a sauce pan over low to medium heat cover and sauté for 25-30 minutes stirring occasionally until they are the softened. After 20 minutes add cheese and continue cooking over low heat

MaryLou's Collards and Kale

This recipe seems so simple and yet it is never the first thing people think of. It is a great way to get in broth when you are eating a real food nutritional approach. We have this at least 4-6 nights a week it is delicious. When we eat chicken we boil thighs in the broth for 15-20 minutes and then season skin on thigh and broil for 5 minutes or so to crisp (best fried chicken without coating with bad ingredients).

Collard Green
Kale
“Better than Bouillon” (I prefer the organic vegetable)
Water

Fill Dutch oven half way with water (the Dutch oven cooks collards faster)

Add bouillon paste to taste (I add a spoon full at a time, mix well and taste the broth and if it is to watered down I will add more paste or if it is to strong I will add more water).

Add Collards and Kale (I use a handful of each and that depends on the size of the pot and the amount of water you added) boil covered for approximately 15 minutes and you are done!

Amy Hager's Veggie Flax Wraps
3 large carrots
1 medium onion
1 cup flax meal
2 Tbs wheat free tamari or coconut aminos
1 tsp garlic powder

Place carrots and onion into a food processor and blend until finely ground. About 30 seconds will create this consistency. Transfer to a bowl.

Add 1 cup of flax meal and 2 Tbs of tamari/aminos and garlic powder. Mix until blended into a dough-like consistency. If the mixture is too dry, you may add a tablespoon of water or 2 until the dough like consistency is achieved.

If you have a large dehydrator: Remove the dough ball and spread onto dehydrator sheet covered with teflex and spread to a 1/4 inch thickness. Try to keep the thickness consistent and avoid thin spots. Place in dehydrator set at 120 degrees. After 2 hours, take the sheet out and gently flip it over. Peel back the lining and place back in dehydrator for another hour.

Otherwise, spread onto a parchment or silicone lined cookie sheet and bake (again aim for consistent thickness). Place in oven warmed to 150 degrees. Check on the wrap after an hour an a half to see pliable the corners are. If not totally mushy, it's ready to flip and peel off the parchment paper. Return to oven or another hour.

After the wraps have cooled a bit, you can slice them into whatever shapes or sizes you like. I find this recipe easily creates 6 individual wraps suitable for rolling veggies, tuna or your favorite combinations.

Each serving has about 150 calories, 10 grams carbs, 13 grams fat and 8 grams protein. Made with 100% REAL food!

I have a simple recipe for yogurt that can be as full fat as you want it to be. 1. Take 4 to 6 cups of whole milk (highest quality you can buy) 2. If you want a fuller fat recipe, substitute one cup or more of the milk with heavy cream 3. Heat the milk/cream to 180 degrees, stirring constantly and take off the burner. 4. Cool the mixture to 110 degrees then add 1/2 to 1 cup of room temperature unsweetened yogurt and mix. 5. poor the mixture into a glass or plastic container and seal with a lid. 6. Place the container in a water bath in a slow cooker with a programable temp guage set for 110 degrees. (if you don't have this type of slow cooker, I've heard you can turn on the light in your oven and set your yogurt inside and that will be about 110.) 7. Let it sit for 10 to 12 hours. Once the yogurt is solid you can put it in the fridge. 8. If you want a thicker yogurt, strain out the whey water using 4 layers of cheese cloth. I've done this recipe many times and it's amazing how easy it is and how good the yogurt is. I once did a batch with 4 cups of whole milk to 2 cups heavy cream. Once I strained it, it was a thick as cream cheese!

Paleo bloggers Juli Bauer and Julia Colling join our host Dietitian Cassie along with guest co-host and fellow registered dietitian Laura Schoenfeld today in Episode 97 of "Low-Carb Conversations With Jimmy Moore & Friends!"

With Jimmy away, Cassie invited on one of her fellow RDs to join her in today's episode in the amazing Laura Schoenfeld from the "Ancestralize Me" blog and a staff nutritionist at ChrisKresser.com.
