IS THIS WOMAN QUALIFIED TO BE BELGIUM'S HEALTH MINISTER?

Is she too fat to be a Health Minister?

In today's special extended final-show-of-2014 episode, our co-hosts Jimmy Moore and Dietitian Cassie are joined by another one of Cassie's all-star clients Jean Burke (she doesn't have a website or social media to connect with her) as well as a Vancouver, Washington-based nutritional therapy practitioner named Daniele Della Valle from "Skinny Girl Eats Fat" who is a bona fide foodie who had to overcome some nagging food sensitivity and digestive issues that were plaguing her health thanks to a low-carb, high-fat diet.

BRITA'S CREATIVE NEW SUGAR BUILDINGS AD

Brita's "Sugar Buildings" Ad

Listen in to hear Jimmy, Cassie, Jean and Daniele give their thoughts and opinions about whether the nearly 300-pound new Health Minister of Belgium is the right choice for that position, why The Chocolate Milk Diet is probably a very bad idea, the supposed list of eight carbs that you should be eating, push back from some scientists about the recent pro-fat studies, a new marketing ad from Brita pointing to the shocking sugar content in sugary soda, why hearkening back to the lifestyle habits of our grandparents could fix food allergies, whether cooking, cooling and then reheating pasta turns it into a resistant starch, an insightful op-ed column from the incredible Kelly Coffey (gotta get her on as a guest friend in 2015!) about the way we perceive ourselves in this weight and health journey, and a column that asks whether we should all be eating more fat in our diet. This special extended episode of the podcast ends with some great health tips from our guest friends. So, for one last time in 2014, pull up a chair, grab a cup of coffee and let's talk!

Controversial Ingredient To Be Removed From Silk Beverages

When Dietitian Cassie first joined this podcast as a guest friend way back in Episode 50, who knew that someday she would not only be a part of the history of "Low-Carb Conversations," but would play such an integral role in its growth and success? It's been almost exactly two years since she took over as co-host from Mindy Noxon Iannotti to join Jimmy Moore each week looking at the health headlines and she has done such an amazing job in her role that she warrants being a part of the name of the show, too. This is the big announcement we said we were going to make today and here it is: the name of this podcast is changing to "Low-Carb Conversations with Jimmy Moore, Dietitian Cassie & Friends!"

Cassie so deserves that equal billing with Jimmy for developing into one of the most knowledgeable, skilled health podcasters online today. We are all so proud of what she brings to this podcast through the education she has had in nutrition and the experience of working with thousands of clients to make them healthier than they could have ever imagined through her PFC balanced approach to diet. Coke Confronts Its Big Fat Problem

In today's episode, our co-hosts Jimmy Moore and Dietitian Cassie are joined by two truly amazing guest friends who actually both found Paleo through the Whole30 in a San Francisco Bay Area Certified Nutrition Consultant with a fascinating story of overcoming alcohol and smoking addiction named Susan McCauley at "Evolve Nutrition" and an amateur triathlete who was diagnosed with a debilitating condition called "Glycogen Storage Disease Type V" (also known as McArdle's Disease) and discovered the amazing health benefits that come from eating a ketogenic Paleo diet named Dane DeValcourt (Dane's story is featured in Jimmy's new book Keto Clarity). Listen in to hear Jimmy, Cassie, Susan, and Dane give their thoughts about that new low-carb vs. low-fat diet study funded by the National Institutes of Health that published this week, why there is danger to your health when you don't consume ENOUGH salt in your diet, the desperation by companies like Coca-Cola to revive their brand that has been built on sugary sodas, another vascular surgeon coming out in opposition to statin medications, an op-ed from a frustrated chef who doesn't think customers should be making so many menu substitutions without a disease requiring it, a registered dietitian (and it's not Cassie!) sharing why saturated fats and cholesterol are not harmful to consume, and why school districts are making the decision to drop the new federal "healthy" school lunch guidelines because they're just not working. Plus, don't miss Susan's amazingly ketogenic-friendly Rosemary Thyme Butter recipe and Dane's high-fat tip at the end of the show. It's time to pull up a chair, grab a cup of coffee and let's talk!

Merlin's Stupidly Easy Spicy Mayonnaise
1 whole egg
3/4 cup Avocado Oil
1 tbsp Frank's Red Hot sauce (get the original, all of the new variants have crappy additives in them. the original is just cayenne peppers, vinegar, water, salt and garlic)

Crack the egg into a glass bowl, add the oil and hot sauce. Place a stick or immersion blender directly over the egg yolk. Blend on High. When you see the emulsion coming out from the sides of the blender, stir it around to incorporate the oil and hot sauce. See? Stupidly Easy!

Courtney's Snackmonster (Grain-Free) Granola

Dry ingredients:
1c almond meal (coarse ground such as from Trader Joes)
½ c flaxseed meal
1 Tbsp cinnamon
2 tsp sea salt- more to taste
1 c shredded unsweetened coconut
¼ c sunflower seeds (or any other seeds/nut of a similar size such as pumpkin seeds, cashew pieces, slivered almonds)
~2 c mix unroasted, unsalted nuts (combo of almonds, pecans, walnuts is my favorite)
1 big handful of dried wild blueberries (or other dried fruit diced up)

Wet ingredients:
1 Tbsp vanilla
½ c coconut oil in solid form
¼ c + 1 Tbsp honey

1. Preheat oven to 300 degrees and line a large baking sheet with foil (this makes for easier clean up).

2. Mix all dry ingredients (EXCEPT dried fruit) in a large bowl.

3. Melt coconut oil in microwave. Mix in the honey and vanilla and then stir into the dry until everything is moistened.

4. Use a spatula to spread granola evenly on the baking sheet.

5. Bake for 15 minutes. Remove from oven. Gently stir and flip in sections.

6. Increase temperature to 325 degrees.

7. While oven temp increases sprinkle your dried fruit over the just flipped granola and press down into the granola with a spatula.

8. Return to the oven for about 10 minutes. Keep an eye on it, you don’t want it to darken too much and taste burnt.

9. Once removed from the oven let it cool, this is what will let it get crunchy.

10. Enjoy over full-fat yogurt, cottage cheese, with almond milk, or just by itself!

Irish low-carb diet and fitness specialist Ben McClure and 75-year old New Zealand-based nutritional ketosis blogger Anne Franklin join our hosts Jimmy Moore and Dietitian Cassie today in Episode 115 of "Low-Carb Conversations With Jimmy Moore & Friends!"

The nutritional tide is turning and we're chronicling that paradigm shift each and every Friday here on "Low-Carb Conversations." In some small way, we hope this podcast is helping make a difference in the lives of people who are sick and tired of thinking a low-fat, high-carb diet is the only way to obtain health. If you're a regular listener to this podcast, then you already know how wrong -- dead wrong! -- that really is. Our enthusiastic hosts and intelligent guest friends from the Paleo, primal, and low-carb communities enjoy having engaging discussions about all the health headlines that are making news and shaping views in the minds of people every single day. It's critically important that the misinformation that gets spread out there in the mainstream health media gets corrected which is what we try to do here on a weekly basis. June 23, 2014 TIME Magazine Cover Story On Fat

In today's episode, our hosts Jimmy Moore and Dietitian Cassie are pleased to welcome two international guest friends in a low-carb nutrition and fitness expert from Ireland named Ben McClure and a 75-year old New Zealand woman named Anne Franklin from the "Nutritional Ketosis And Fasting" blog. Listen in as Jimmy, Cassie, Ben, and Anne give their thoughts about the TIME magazine cover story about how we got it wrong on saturated fat, the USDA allowing chickens to be sent to China for processing before returning to the United States for food, the "truth" about low-carb diets being necessary or not, the pros and cons of the health benefits vs. negative health ramifications of Dave Asprey's Bulletproof Coffee, whether drinking lots of water can reverse aging, an insightful commentary on nutritional science and what to make of the studies on diet and health, and so much more. It's time to pull up a chair, grab a cup of coffee and let's talk!

PUMPKIN AND SPINACH FRITTATA by Anne Franklin

Prepare a large baking dish by brushing with melted butter. I often line my dish with baking paper instead as it saves scrubbing later.

Preheat oven to 340 degrees Fahrenheit

Ingredients
400g roasted chunks of pumpkin
200g spinach
120g blue cheese or feta, (diced or crumbled)
12 eggs
50 ml heavy whipping cream
120g creamy blue cheese or feta
100g diced bacon
1 tomato
200g grated cheese
seasoning and herbs to taste

I usually cut my pumpkin into 1 -2 inch pieces. I toss the pieces in a little olive oil, seasoned herbs such as Tuscan seasoning, and bake in the oven until soft. Better still is to bake extra when roasting veggies for dinner the previous day.

Layer the pumpkin and spinach in your baking dish with pieces of the creamy cheese or feta. Beat the eggs together with the cream. Pour the eggs over the veggies. Scatter the pieces of bacon over. Slice tomato and place over the dish. Sprinkle grated cheese over.

Bake in a moderate oven until firm. and the cheesy top is golden. Takes 30 to 45 minutes depending on the depth of the dish. Great as a main meal with salad and slices well when cold to make an ideal picnic food.

MaryLou's Faux Scalloped Au Gratin Potatoes
1 Celery root or Celeriac peeled, cleaned and sliced (I use a mandolin and slice the pieces thin and then cut them into smaller pieces)
4 tablespoons of butter (I use Kerrygold unsalted)
1 cup of heavy cream
Garlic powder
Salt
Pepper
1/4 cup Parmesan
1/4 cup Romano
1/4 cup Mozzarella

Put all ingredients, except cheese, in a sauce pan over low to medium heat cover and sauté for 25-30 minutes stirring occasionally until they are the softened. After 20 minutes add cheese and continue cooking over low heat

MaryLou's Collards and Kale

This recipe seems so simple and yet it is never the first thing people think of. It is a great way to get in broth when you are eating a real food nutritional approach. We have this at least 4-6 nights a week it is delicious. When we eat chicken we boil thighs in the broth for 15-20 minutes and then season skin on thigh and broil for 5 minutes or so to crisp (best fried chicken without coating with bad ingredients).

Collard Green
Kale
“Better than Bouillon” (I prefer the organic vegetable)
Water

Fill Dutch oven half way with water (the Dutch oven cooks collards faster)

Add bouillon paste to taste (I add a spoon full at a time, mix well and taste the broth and if it is to watered down I will add more paste or if it is to strong I will add more water).

Add Collards and Kale (I use a handful of each and that depends on the size of the pot and the amount of water you added) boil covered for approximately 15 minutes and you are done!

Amy Hager's Veggie Flax Wraps
3 large carrots
1 medium onion
1 cup flax meal
2 Tbs wheat free tamari or coconut aminos
1 tsp garlic powder

Place carrots and onion into a food processor and blend until finely ground. About 30 seconds will create this consistency. Transfer to a bowl.

Add 1 cup of flax meal and 2 Tbs of tamari/aminos and garlic powder. Mix until blended into a dough-like consistency. If the mixture is too dry, you may add a tablespoon of water or 2 until the dough like consistency is achieved.

If you have a large dehydrator: Remove the dough ball and spread onto dehydrator sheet covered with teflex and spread to a 1/4 inch thickness. Try to keep the thickness consistent and avoid thin spots. Place in dehydrator set at 120 degrees. After 2 hours, take the sheet out and gently flip it over. Peel back the lining and place back in dehydrator for another hour.

Otherwise, spread onto a parchment or silicone lined cookie sheet and bake (again aim for consistent thickness). Place in oven warmed to 150 degrees. Check on the wrap after an hour an a half to see pliable the corners are. If not totally mushy, it's ready to flip and peel off the parchment paper. Return to oven or another hour.

After the wraps have cooled a bit, you can slice them into whatever shapes or sizes you like. I find this recipe easily creates 6 individual wraps suitable for rolling veggies, tuna or your favorite combinations.

Each serving has about 150 calories, 10 grams carbs, 13 grams fat and 8 grams protein. Made with 100% REAL food!

I have a simple recipe for yogurt that can be as full fat as you want it to be. 1. Take 4 to 6 cups of whole milk (highest quality you can buy) 2. If you want a fuller fat recipe, substitute one cup or more of the milk with heavy cream 3. Heat the milk/cream to 180 degrees, stirring constantly and take off the burner. 4. Cool the mixture to 110 degrees then add 1/2 to 1 cup of room temperature unsweetened yogurt and mix. 5. poor the mixture into a glass or plastic container and seal with a lid. 6. Place the container in a water bath in a slow cooker with a programable temp guage set for 110 degrees. (if you don't have this type of slow cooker, I've heard you can turn on the light in your oven and set your yogurt inside and that will be about 110.) 7. Let it sit for 10 to 12 hours. Once the yogurt is solid you can put it in the fridge. 8. If you want a thicker yogurt, strain out the whey water using 4 layers of cheese cloth. I've done this recipe many times and it's amazing how easy it is and how good the yogurt is. I once did a batch with 4 cups of whole milk to 2 cups heavy cream. Once I strained it, it was a thick as cream cheese!

It's the special day each week that we set aside to take a closer look at some recent health headlines from a low-carb, Paleo, and real food perspective. There are so many voices out there opining about what you should think about diet and healthy living, but it's good to get educated thoughts and ideas from various people in the alternative nutritional health community. It can get nauseating hearing a monolithic message about health from mainstream news sources. Still think canola oil is healthy? Watch this video discussed in today's show:

Listen in as these two talk passionately about this incredibly important concern in the field of dietetics.

Today's guest friends are George Bryant from "Civilized Caveman Cooking Creations" and Jennifer Matthews (aka Naturopath Jen) from "All Things Low Carb High Fat" sharing their thoughts with Cassie and Andy about some recent health headlines, including the nutritional health lessons for dietitians that a chip maker had to share, how Oscar Meyer is trying to reach the adult population with one of their traditionally kid-based food products, the surprising end to the debate over margarine vs. butter, the problems with the "food" available for sale at Wal-mart, and so much more. Just as we did while Jimmy was away last year with his book, we'll be featuring some guest co-hosts filling the chair with Dietitian Cassie over the next few months (except for our epic Episode 100 that you won't want to miss coming up on Friday, February 28, 2014--MORE DETAILS ON THAT SOON!).

Don't forget we are a listener-supported podcast and rely on your donations to keep the episodes coming throughout 2014. THANK YOU FOR YOU SUPPORT!

With Jimmy away, Cassie invited on one of her fellow RDs to join her in today's episode in the amazing Laura Schoenfeld from the "Ancestralize Me" blog and a staff nutritionist at ChrisKresser.com. She and Cassie chatted about this blog post from Laura explaining the flaws in that U.S. News & World Report ranking of diets that released last month as well as a SheKnows news story that quoted Cassie responding to what U.S. News considers a "healthy" diet. When you get two real food RDs this riled up, it must be an important topic of discussion!

Cassie and Laura are joined by two incredible guest friends in Juli Bauer from the "PaleOMG" blog and author of the cookbook OMG. That's Paleo? and Julia Visser from "Jules' Fuel." This fabulous female foursome had a great time sharing their opinions about some recent health headlines, including four reasons why you shouldn't go on a low-carb diet, more commentary on the U.S. News & World Report 2014 diet rankings, the critical role saturated fat should play within the context of a healthy diet, the World Health Organization (WHO) deciding to pull back the curtain on the health impact of sugar, seven practical ways to begin reducing the amount of carbohydrate in your diet, and so much more! Plus, everyone's favorite segment with delicious new low-carb recipes is back at the end of today's show. I know it's been a while, but you know what to do--pull up a chair, grab a cup of coffee and let's talk about it!
