Registered dietitian and Paleo diet health podcaster Kelsey Marksteiner and low-carb, high-fat weight loss success story and YouTube video star Bob Briggs join our hosts Jimmy Moore and Dietitian Cassie today in Episode 126 of "Low-Carb Conversations With Jimmy Moore & Friends!"

When Dietitian Cassie first joined this podcast as a guest friend way back in Episode 50, who knew that someday she would not only be a part of the history of "Low-Carb Conversations," but would play such an integral role in its growth and success? It's been almost exactly two years since she took over as co-host from Mindy Noxon Iannotti to join Jimmy Moore each week looking at the health headlines and she has done such an amazing job in her role that she warrants being a part of the name of the show, too. This is the big announcement we said we were going to make today and here it is: the name of this podcast is changing to "Low-Carb Conversations with Jimmy Moore, Dietitian Cassie & Friends!"

Cassie so deserves that equal billing with Jimmy for developing into one of the most knowledgeable, skilled health podcasters online today. We are all so proud of what she brings to this podcast through the education she has had in nutrition and the experience of working with thousands of clients to make them healthier than they could have ever imagined through her PFC balanced approach to diet. CONGRATULATIONS Dietitian Cassie and we look forward to hearing from you for many more years to come. HAVE YOU SEEN BOB BRIGGS' VIRAL LOW-CARB, HIGH-FAT VIDEO?

Butter Makes Your Pants Fall Off

In today's episode, our co-hosts Jimmy Moore and Dietitian Cassie have an exciting pair of guest friends joining them in a New York City-based registered dietitian named Kelsey Marksteiner from "Healthy Gut Healthy Life," who is the co-host of the "Ask The RD" iTunes podcast with fellow real food RD Laura Schoenfeld, and a warm and engaging Tennessee man named Bob Briggs who has created quite a stir about low-carb, high-fat diets online with his new Butter Makes Your Pants Fall Off and other YouTube video. Listen in to hear Jimmy, Cassie, Kelsey and Bob have a fun-filled time sharing their thoughts about the secret ingredients found in the popular Pumpkin Spice Latte from Starbucks (and none of them are pumpkin!), yet another new cholesterol-lowering pill promoted as healthy and heart attack-preventing, how weight loss transformation pictures can be manipulated very easily, the reaction from the vegan community to all the positive stories about saturated fat that have been happening in 2014 (you gotta love it!), how Lebron James' success eating a low-carb diet has brought out the defenders of carbohydrate-based foods in force, whether Dr. Atkins is finally getting his vindication in light of all the positive coverage of low-carb, high-fat diets, and the role of dietary fat in maintaining a healthy weight. Plus, don't miss cooking tips and recipes (like Kelsey's "Lemon Ginger Probiotic Soda") from our guest friends at the end of the show. So pull up a chair, grab a cup of coffee and let's talk!

These are exciting times for those of us who believe in the healthy low-carb lifestyle. ARE THE GLORY DAYS OF SUGARY SODA FINALLY COMING TO AN END?

Coke Confronts Its Big Fat Problem

In today's episode, our co-hosts Jimmy Moore and Dietitian Cassie are joined by two truly amazing guest friends who actually both found Paleo through the Whole30 in a San Francisco Bay Area Certified Nutrition Consultant with a fascinating story of overcoming alcohol and smoking addiction named Susan McCauley at "Evolve Nutrition" and an amateur triathlete who was diagnosed with a debilitating condition called "Glycogen Storage Disease Type V" (also known as McArdle's Disease) and discovered the amazing health benefits that come from eating a ketogenic Paleo diet named Dane DeValcourt (Dane's story is featured in Jimmy's new book Keto Clarity). Listen in to hear Jimmy, Cassie, Susan, and Dane give their thoughts about that new low-carb vs. low-fat diet study funded by the National Institutes of Health that published this week, why there is danger to your health when you don't consume ENOUGH salt in your diet, the desperation by companies like Coca-Cola to revive their brand that has been built on sugary sodas, another vascular surgeon coming out in opposition to statin medications, an op-ed from a frustrated chef who doesn't think customers should be making so many menu substitutions without a disease requiring it, a registered dietitian (and it's not Cassie!) sharing why saturated fats and cholesterol are not harmful to consume, and why school districts are making the decision to drop the new federal "healthy" school lunch guidelines because they're just not working. Plus, don't miss Susan's amazingly ketogenic-friendly Rosemary Thyme Butter recipe and Dane's high-fat tip at the end of the show. It's time to pull up a chair, grab a cup of coffee and let's talk!

1 whole egg
3/4 cup Avocado Oil
1 tbsp Frank's Red Hot sauce (get the original, all of the new variants have crappy additives in them. the original is just cayenne peppers, vinegar, water, salt and garlic)

Crack the egg into a glass bowl, add the oil and hot sauce. Place a stick or immersion blender directly over the egg yolk. Blend on High. When you see the emulsion coming out from the sides of the blender, stir it around to incorporate the oil and hot sauce. See? Stupidly Easy!

Courtney's Snackmonster (Grain-Free) Granola

Dry ingredients:
1c almond meal (coarse ground such as from Trader Joes)
½ c flaxseed meal
1 Tbsp cinnamon
2 tsp sea salt- more to taste
1 c shredded unsweetened coconut
¼ c sunflower seeds (or any other seeds/nut of a similar size such as pumpkin seeds, cashew pieces, slivered almonds)
~2 c mix unroasted, unsalted nuts (combo of almonds, pecans, walnuts is my favorite)
1 big handful of dried wild blueberries (or other dried fruit diced up)

Wet ingredients:
1 Tbsp vanilla
½ c coconut oil in solid form
¼ c + 1 Tbsp honey

1. Preheat oven to 300 degrees and line a large baking sheet with foil (this makes for easier clean up).

2. Mix all dry ingredients (EXCEPT dried fruit) in a large bowl.

3. Melt coconut oil in microwave. Mix in the honey and vanilla and then stir into the dry until everything is moistened.

4. Use a spatula to spread granola evenly on the baking sheet.

5. Bake for 15 minutes. Remove from oven. Gently stir and flip in sections.

6. Increase temperature to 325 degrees.

7. While oven temp increases sprinkle your dried fruit over the just flipped granola and press down into the granola with a spatula.

8. Return to the oven for about 10 minutes. Keep an eye on it, you don’t want it to darken too much and taste burnt.

9. Once removed from the oven let it cool, this is what will let it get crunchy.

10. Enjoy over full-fat yogurt, cottage cheese, with almond milk, or just by itself!
